This take on everyone's favorite cold-weather comfort food - Tomato Soup and Grilled Cheese: is the perfect meal/snack for warmer months. I love a good bowl of tomato soup but not really when it's hot outside.
However, this combo is still a great way to get in nutrients. Whole grain bread has filling fiber, cheese has satisfying protein, and tomatoes offer tons of antioxidants and nutrients.
Instead of having your tomatoes as soup, how about as a dip? It's always fun to dip, right?
To top it all off this entire recipe has only 7 ingredients! Seven. That's it.

Natural Baby Food isn't your chicken nugget, french fry, cookie filled cookbook but it's also not a apple-aloe-kale juice diet book either. It's a happy medium of knowledgeable yet easy to digest information, delicious & nutritious yet easy & approachable recipes.
Similar to The Natural Pregnancy book, you don't have to have babies or be pregnant to enjoy this cookbook. Strawberry and Cream Cheese Stuffed French Toast, Zucchini Tots, Barbecue Cheddar Mini Meatloaves, and Apple Pie Quinoa Cookies all have my tummy rumbling. These Grilled Cheese Dippers were a hit at our house. When I served these, everyone enjoyed them! They are fun to eat & who doesn't love a good grilled cheese?!
We had them as a little appetizer but they'd be great for lunch or dinner. And if you have any leftover sauce, save it to serve over pasta for an easy meal!
Sauce
- 8 ounce can no salt added tomato sauce
- 2 tablespoon cream cheese
- 1/4 teaspoon dried oregano
- 1/8 teaspoon garlic powder
- pinch of salt optional
Grilled Cheese
- 8 slices whole grain bread
- 1 tablespoon butter softened
- 4 ounces cheddar cheese shredded
Make the creamy tomato sauce:

Add the tomato sauce, cream cheese, oregano, garlic powder, and salt (if using) to a small saucepan. Heat over medium-low and cook, stirring occasionally until sauce is creamy & cream cheese is melted.
Make the grilled cheese:

Meanwhile, heat a griddle or large skillet over medium-high heat. Spread butter on one side of each slice of bread. Place the bread, butter side down, into the skillet. Top evenly with cheese. Top with the other slice of bread, butter side out.

Cook for 2-5 minutes per side, until cheese is melted and bread is golden brown & toasted.
Serve:

Cut each grilled cheese into four slices and serve with creamy tomato sauce. Enjoy!
*You can have the cheese in slices or shredded. Use one ounce of cheese per sandwich which is about 1 slice or 1/4 cup shredded.
